摘要 A composition for colouring a non-meat protein containing material, comprises: a thermally unstable pigment which provides to the protein containing material a colour resembling that present in a browning meat only in an uncooked state and which undergoes degradation upon exposure to a temperature effective to cook said protein containing material, the degraded thermally unstable pigment being ineffective to provide substantial coloration to said protein containing material; and a browning agent which imparts a brown colour to said protein containing material upon exposure to a temperature effective to cook said protein containing material.
