Spray-dried xylitol (I) obtained from (I) solution and having (I) content at least 98 wt.% (based on (I) particles). Spray-dried xylitol (I) obtained from (I) solution and having (I) content at least 98 wt.% (based on (I) particles) where: (1) the individual (I) particles have an irregular, fissured surface and are obtained in the spray tower in the form of free-flowing pure powder of water content 0.2-1% and particle size range 0.1-0.8 mm; and (2) the pure powder obtained at the tower outlet has bulk density (DIN ISO 3944) less than 0.65 kg/l, dissolution time less than 12 s and flow time less than 12 s/100 ml or angle of repose less than 33[deg].
