PURPOSE: A meat processing method using a meat chopper is provided to improve the convenience of chopping of meat, especially, not separated with bones, and to enable mass production of chopped meat using automated facilities. CONSTITUTION: The meat processing method comprising the steps of disposing a lump of meat to be chopped on a conveyor belt(4); transferring the disposed meat lump through the rotating operations of the conveyor belt and an input roller; chopping the transferred meat lump by making use of a cutting unit by a constant vertical height, the cutting unit consisting of a plurality of blades; and transferring the chopped meat through the operation of the conveyor belt and transfer rollers.
