PROBLEM TO BE SOLVED: To provide a method for purifying a water-soluble protein solution, causing less adsorption of the water-soluble protein (such as collagen and gelatin) to an ion-exchange resin than conventional purification methods, and effectively removing odor from the water-soluble protein solution obtained from fishes. SOLUTION: The method comprises contacting the water-soluble protein solution with a strong acid cation exchange resin and a weak basic anion exchange resin, e.g. the water-soluble protein solution is sequentially contacted with the strong acid cation exchange resin and the weak basic anion exchange resin or the water-soluble protein solution is contacted with a mixed bed of the both resins.
