PURPOSE: Provided is a process for preparing a fermented uncooked food containing fermented milk, thereby providing the fermented uncooked food with characteristic tastes and flavor of the fermented milk and uncooked food, and providing a consumer rich nutrients. CONSTITUTION: A process for preparing a fermented uncooked food containing fermented milk comprises the steps of; sterilizing and cooling defatted milk at appropriate temperature and for appropriate period of time; fermenting the milk with Lactobacillus bulgaricus, Lactobacillus acidophilus or Bifidobacterium as a starter, at 35-40 deg.C for 24-48 hours to give fermented milk having acidity of 2%; adding dried powder of uncooked food material while fermenting the milk and stirring them to give paste; re-fermenting the paste for 10-24 hours and rapidly freezing it under the vacuum condition of 4.6torr at -30 to -40 deg.C; and drying it to normal temperature for 10-24 hours under the vacuum condition of 1-0.1torr.
