PURPOSE: Provided is a manufacture method of functional kimchi by addition of fresh meat, such as duck, chicken, white silky fowl, ostrich, quail and the like. Therefore, the manufactured functional kimchi contains an excellent taste and flavor and rich nutrients, such as calcium. CONSTITUTION: A manufacture method of functional kimchi comprises the steps of: cutting fresh meat, such as duck, chicken, white silky fowl, ostrich, quail and the like, with bones into a size of 2cmx2cm; mixing the cut pieces with general kimchi filling stuffs(hot pepper, garlic, ginger, welsh onion, radish, and the like); stuffing the mixture into salted chinese cabbage; and inserting the kimchi into a pot and maturing it at 5-10 deg. C for about 20 days.
