The invention concerns a method for automated production of ready-to-fill basic pizza crust (3) based on pizza pastry from a pre-leavened raw pizza dough. Said method comprises at least one step which consists in shaping the pizza paste in the form of a layer (2) or sheet. The method is characterized in that it consists, after the shaping step, in incompletely pre-cooking the layer (2) or sheet, cutting out the layer (2) or sheet in the form of one or several individual pieces respectively constituting a basic pizza crust and in conditioning the or said pieces for subsequent filling and baking. |
