PROBLEM TO BE SOLVED: To provide a method for producing a dry food, by which the uniformly swollen and dried food can be obtained without uneven heating, even when the food to be heated has any shape, while it is difficult to swell and dry a material not containing thermally un-denatured protein in a microwave swelling and drying method and further while it is also difficult to swell and dry a material containing thermally denatured protein or a material not containing protein, although the material is heated. SOLUTION: This method for producing the dry food is characterized by heating the food with microwaves in the presence of superheated steam. COPYRIGHT: (C)2004,JPO
