SOLUTION: This method for producing theβ-hydroxyamino acid derivative comprises subjecting an amino acid derivative having a prescribed structure and an aldehyde to an aldol reaction in the presence of an optically active N-spiro quaternary ammonium salt represented by formula (III) and then hydrolyzing the obtained erythro-β-hydroxyamino acid ester Schiff base.
