PROBLEM TO BE SOLVED: To provide a method and an apparatus for the rapid heat sterilization carrying out a heat sterilization at a temperature responding to kind of foods by heat sterilizing the food at the objective temperature in a short time heating. SOLUTION: The apparatus 1 for rapid heat sterilization comprises a sterilizing tank 10 housing the food sealed in a container 60 and a liquid 52, a heater 22 heating the liquid 52 which is supplied to the sterilizing tank 10, and nozzles 47 which squirts the heated liquid 52 to the liquid 52 in the sterilizing tank 10.
