PURPOSE:To obtain the subject composition capable of giving cakes having uniform, nonflat texture and favorable palate feeling of melting in the mouth, satisfying natural-oriented palate feeling, also having dampish feeling. CONSTITUTION:This oil-in-water type foamable emulsified fat composition comprising an edible oil and fat, water and other ingredients, contains, based on 100 pts.wt. of the whole composition, 10-60 pts.wt. of the edible oil and fat, 1.5-8 pts.wt. of a glycerin fatty acid monoester, 0.7-3 pts.wt. of a sucrose fatty acid ester >=7 in HLB number, and 0.1-2 pts.wt. of at least one kind among organic acid monoglycerides and polyglycerin fatty acid esters. The other objective cakes can be obtained by using this composition. |
