摘要 The system for maturation of wine involves wood occupying an internal situation, totally submerged, within the liquid volume stored in the maturation vat, inalterable and of adequate morphology for mechanical handling and cleanliness. The submerged wood has available at least a three-dimensional grillage formed by ribs or laths of wood, with which the molecular interactions concur simultaneously and uniformly in the total volume of wine contained. The increase in contact surface of the wood with the wine (delta S) in respect of a conventional system of saturation in barrel which employs the same volume of wood as a barrel without bases is, approximately: DeltaS = (4pir (a + b) + 2ab)n-2pir (an + r) in which: r = radius of bases of barrel a = width of staves b = thickness of staves n = number of staves.
