<p>The invention concerns a wine press for grape gathering comprising a cylindrical cage (1) having a plurality of orifices (2), wherein are arranged two plates (5), mounted on a reverse-pitch central screw (6), pressing the grapes by being brought closer to each another. The invention is characterized in that it comprises: a) a device for controlling the grape pressing means providing pressure through successive stages, ranging between 0.25 and 0.50 bar, the maximum pressure being less than 2 bars; b) draining means (3, 7) made of perforated stainless steel plate of a thickness of the order of 2 mm, arranged inside the cylindrical cage (1) of the press; c) a cylindrical cage (1) made of coiled perforated stainless steel plate, of thickness ranging between 3 and 5 mm, the total surface of the perforations ranging between 15 % and 25 % of the surface of the cage cylindrical wall.</p> |
