<p>The invention relates to aqueous edible fixatives for decorative and/or gustatory purposes, particularly for fixing edible particles to foodstuffs and to the use thereof. The invention also relates to a method for fixing edible particles to foodstuffs and to foodstuffs containing the inventive fixatives. The fixatives contain at least one gelating protein, for example, whey protein or wheat protein and, optionally, starch hydrolysates, thickeners and emollients such as propylene glycol, glycerin and sorbitol.</p> |
