PROBLEM TO BE SOLVED: To provide an improved method of recovering coffee flavor components eluted, when coffee liquid is concentrated, particularly membrane- concentrated. SOLUTION: The method of producing concentrated coffee liquid comprises following steps: (A) the coffee liquid extracted from roasted and ground coffee beans is concentrated to be separated into the concentrate and the distillate; (B) the distillate obtained in the step (A) is distilled under a reduced pressure of 25-100 kPa to condense the flavor components and water whereby the concentrated flavor components, which is 3-20 wt.% of the distillate; are recovered, and (C) the concentrate obtained in the step (A) and the flavor concentrate obtain in the step (B) are mixed to prepare the concentrated coffee liquid.
