摘要 PURPOSE: Provided are a mulberry leaf taffy for controlling the increase of blood glucose and a method for producing the same. Therefore, the manufactured mulberry leaf taffy is used for a diabetic. CONSTITUTION: A method for manufacturing a mulberry leaf taffy comprises the steps of: mixing starch and water of 50-90 deg.C in a mixing ratio of 1:5-1:8; boiling the mixture; cooling the boiled mixture to 50-70 deg.C, followed by addition of mulberry leaf powder pretreated with malt and saccharification; boiling the saccharified solution and filtration; and concentrating the filtrate.
