<p>It is intended to provide a process for producing a highly unsaturated fatty acid-containing lipid which is less expensive than existing ones, characterized by comprising culturing a microorganism belonging to the genus Mortierella with the use of a saccharified starch, which is less expensive than glucose, would not contribute to an increase in the osmotic pressure of the medium and can be metabolized by the microorganism belonging to the genus Mortierella, as a carbon source of the medium and collecting the highly unsaturated fatty acid-containing lipid from the culture medium.</p> |
