A sensing apparatus (100) is provided for sensing properties of a non-conductive object. The sensing apparatus includes a microwave source (60) to generate microwave signals, a transmitting antenna (2) for transmitting generated microwave signals to an object, a receiving antenna (3) and a microwave reflectometer (50) or other detection device for generating a measurement signal dependent on received microwave signals. A signal processor (6) receives the measurement signal and computes a measure of one or moreproperties of the object according to a predetermined computation, using values of bothmagnitude and phase determined from the measurement signal.
