<p>It is intended to provide a pretreatment agent for fish whereby a lowering in yield of frozen foods, etc. due to heat-cooking can be prevented and a favorable texture can be sustained while showing neither any undesirably effects on the texture or taste nor unnatural feeling; and a method of treating fish by using this agent. Namely, a pretreatment agent for fish prepared by mixing an aqueous solution containing 1 to 30% (v/v) of ethanol and 5 to 25% (w/v) of a citric acid salt with 0.5 to 50% (w/v) of at least one inorganic salt selected from the group consisting of phosphoric acid salts, carbonic acid salts and bicarbonic acid salts, and a method of pretreating fish which comprises contacting the fish with the above-described pretreatment agent.</p> |
