METHOD FOR PRESSURE REDUCTION AND VACUUM PRESERVATION APPARATUS

PROBLEM TO BE SOLVED: To provide a vacuum preservation apparatus with which a material to be preserved (food) is preserved without impairing its toothsomeness. SOLUTION: The vacuum preservation apparatus is equipped with a steam supply means 22 for supplying steam to a container 13 in which the material 14 to be preserved is stored, a closing means for closing the opening of the container 13 when air in the container 13 is replaced with the steam and a cooling means 16 for cooling the container 13. The material 14 to be preserved is preserved in vacuum without deteriorating its toothsomeness while preventing reduction in the water content of the material itself. COPYRIGHT: (C)2004,JPO
