METHOD FOR COLORING MICROBIAL CELLULOSE GEL

PROBLEM TO BE SOLVED: To provide a method for coloring a microbial cellulose gel by which the whole is uniformly colored and color bleeding is not caused when added to a food.

SOLUTION: A coloring matter solution is added to a culture medium consisting essentially of a water-soluble material of sarco carp of a fruit and a microorganism is inoculated therein. Fermentation is then carried out to provide the microbial cellulose gel. The resultant microbial cellulose gel is heated in an aqueous solution of an alkali and then dipped in an acidic aqueous solution.
