<P>PROBLEM TO BE SOLVED: To provide Chinese steamed bun which has a richer and newer flavor than those of conventional Chinese steamed buns prepared by fermenting a dough comprising wheat flour, water, sugar, lard, yeast, and the like, in an about 40°C thermostatic oven, filling the dough with an ingredient prepared by cooking and mixing a meat such as pork and vegetables, and then steaming the product which can be stored for a long period without using a food additive such as a preservative or a pH-adjusting agent for preventing the deterioration of the quality, a perfume for increasing flavor, or a colorant. <P>SOLUTION: This crab-containing Chinese steamed bun is characterized by filling the dough comprising wheat flour, yeast, natural yeast, milk, lard and the like with an ingredient prepared by mixing and cooking crab meat, vegetables, crab ovaries, crab extract, and the like, fermenting the dough, and then steaming the product. <P>COPYRIGHT: (C)2004,JPO |
