<P>PROBLEM TO BE SOLVED: To provide a method for producing a seasoned meat whose freshness can be maintained without deteriorating the flavor of the meat, and to provide the seasoned meat. <P>SOLUTION: The method for producing the seasoned meat is characterized by pickling the meat in a seasoning solution containing salt and a tea extract within a prescribed temperature range from 0°C to a meat-freezing temperature for a prescribed time. Namely, since the meat is pickled in the seasoning solution in the prescribed temperature zone of ≤0°C, the meat can be processed in the condition that the deterioration of the meat hardly proceeds in comparison with cases exceeding 0°C, and since the permeability of the salt into the meat is improved, when the seasoning solution contains the tea extract, the time not freezing the meat can be shortened. The smell of the meat can be reduced or removed by pickling the meat in the tea extract. Thereby, the method for producing the seasoned meat whose freshness can be maintained without deteriorating the flavor of the meat can be provided, and the seasoned meat can be provided. <P>COPYRIGHT: (C)2004,JPO |
