PROBLEM TO BE SOLVED: To provide a frying machine which is compact, can reduce the amount of oil to be used, prevents frying scums from being heated by a heater, and can prevent the generation of smoking or the carbonization of the oil accompanying the heating from occurring as well. SOLUTION: This frying machine has an oil tank having a double tank structure through which a cooking oil 12 can be circulated. One of the oil tanks is formed into a larger cooking tank 16 having a shallower depth and a larger flat area, and the other is formed into a heating tank 18 having a relatively deeper depth, and a smaller flat area. Then, the cooking oil 12 which is heated by the heater unit 20 arranged in the heating tank 18 can be circulated and distributed to the cooking tank 16. COPYRIGHT: (C)2004,JPO
