<P>PROBLEM TO BE SOLVED: To produce a snack-like processed fish or meat product, while using an existing line for producing fish paste products as such. <P>SOLUTION: A method for producing the snack-like processed fish or meat product is characterized by mixing (a) a salt-free paste and (b) starch in a weight ration of 1: 0.25 to 3.5, adding salt just before the mixing process is finished, forming the mixture into a prescribed shape in a state scarcely causing the dissolution of myofibrillary proteins due to the salt-adding and grinding treatments, and then quickly thermally treating the formed product to coagulate proteins. <P>COPYRIGHT: (C)2004,JPO |
