<P>PROBLEM TO BE SOLVED: To provide a sterilization apparatus by using simple supercritical carbon dioxide and a sterilization method. <P>SOLUTION: (1) The apparatus for sterilizing a liquid food or deactivating an enzyme by the supercritical carbon dioxide is obtained by successively connecting (A) a pressure-proof high-speed mixer for mixing the liquid food with carbon dioxide, (B) a pressure accumulation pipe (pressure-proof pipe) and (C) a pressure-proof carbon dioxide pressure release device and keeps the internal temperatures of the mixer (A) and the pipe (B) at the critical temperature of carbon dioxide or above. (2) The method for sterilizing the liquid food or deactivating the enzyme by the supercritical carbon dioxide comprises using the apparatus under conditions described in (a) that the liquid food and carbon dioxide to be introduced into the pressure-proof high-speed mixer are pressurized to the critical pressure of the carbon dioxide or above and (b) that the liquid food and carbon dioxide in the pressure-proof high-speed mixer and the pressure accumulation pipe are heated to the critical temperature of the carbon dioxide from beginning to end. <P>COPYRIGHT: (C)2004,JPO |
