PROBLEM TO BE SOLVED: To provide a delicious coffee drink containing the elements of coffee components in a balanced and harmonized state, free from strong astringent taste and having characteristic rich aroma, taste and flavor of coffee and good body and provide a method for producing the drink. SOLUTION: Coffee beans are extracted at a relatively low temperature, the extracted coffee liquid is treated with an enzyme and the product is treated with an adsorbing resin such as PVPP or an adsorbent such as activated clay to selectively and exclusively remove the astringent components such as caffeine from the extracted coffee liquid. The extracted liquid subjected to the astringent component removing process is freeze-concentracted to obtain a coffee extract especially useful as a raw material for a coffee drink. A coffee drink having rich body and free from excessive astringent taste and harsh taste can be produced by adding the coffee extract to a conventional coffee extract obtained by conventional methods.
