A flake composition, which will form a bilayer lamellar gel network when placed in an oil-in-water system consisting essentially of: i) A cationic swellant which is a saturated fatty acid selected from stearic or palmitic acid, or mixtures thereof in an adduct of amidopropyldimethyl-2-hydroxyethyl ammonium halide. ii) A gellant blend of low HLB emulsifiers which includes a saturated fatty alcohol, the gellant blend having a resultant HLB of 1.5 to 4.5 The adduct described in i) is made in the saturated fatty acid as solvent.
