PURPOSE: Provided are Korean traditional soy sauces fortified with vitamin D and a preparation method thereof by using mushrooms. The Korean traditional soy sauces contain activated vitamin D and/or calcium and has an improved taste and flavor. CONSTITUTION: A preparation method of Korean traditional soy sauces fortified with vitamin D comprises the steps of: irradiating sunlight or artificial UV to a mushroom in order to activate provitamin D; and adding the mushroom containing the activated vitamin D to Korean traditional soy sauces, followed by maturation.
