FIELD: food industry, juice production. SUBSTANCE: the present innovation deals with treating raw material with liquefied gas at pressure being above atmospheric one and decrease of pressure to be equal to atmospheric one at rate to provide raw material's freezing. Before treatment, raw material is treated with preparation obtained due to successive extraction of Pythium ultimum micromycete biomass with nonpolar extragent in supercritical state with water, alkali, water, acid, water, alkali and water followed by combining solid residue with the first extract at the quantity of 0,5-1.104 mg/t to be kept for 2-5 h. Moreover, one should apply ammonia gas for treatment. The suggested innovation enables to increase juice quality due to excluding opalescence. EFFECT: higher efficiency. 2 ex |
