Comp. for producing puddings on the basis of jellied milk comprises (pre. 1.5-3.5 pbw of) a tetraalkali pyresphosphate, (1-5 pbw of) an edible Ca salt (such as citrate, gluconate, propibnate, saccharate or tartrate), and (0.5-4 pbw of pref. a 1:1 mixture of) a xanthomonas colloid (pref. produced by bacterium xanthomonas campestris in a glucose-base culture) and gum from carob seeds. Sugar, flavouring agents and colouring substances, etc. may be added. On addition of milk, a jellylike product is obtained in the cold, without the use of pregelatinized starch. |
