PROBLEM TO BE SOLVED: To obtain a cholesterol esterase exhibiting activity against a wide range of fatty acid cholesterol esters and having high stability. SOLUTION: The new cholesterol esterase has physicochemical properties exhibiting high activity against linoleic acid cholesterol, oleic acid cholesterol, stearic acid cholesterol, palmitic acid cholesterol, n-caprylic acid cholesterol, myristic acid cholesterol, lauric acid cholesterol and capric acid cholesterol and having the most suitable pH 5.5-9.5 of hydrolysis in the case of the linoleic acid cholesterol as a substrate, about 100% residual activity at pH 5-10 in a Britton-Robinson wide buffer solution at 25°C after 19 hours, the most suitable temperature of about 53°C of hydrolysis in 0.1 M phosphoric acid buffer solution (pH 7.0), residual activity of about 100% in the same buffer solution at each temperature up to 50°C after a treatment for 30 minutes and an isoelectric point of about pH 3 by sucrose density gradient ampholine electrophoresis.
