METHOD FOR PRODUCING UNREFINED RICE WINE

PROBLEM TO BE SOLVED: To improve qualities of unrefined rice wine, by partially mixing refined rice wine with roughly strained suspension of yeast mash.

SOLUTION: The method for producing the unrefined rice wine comprises mixing ordinary rice wine with 20% of the roughly strained suspension of yeast mash of Kimoto (an old rice wine-brewing process fermentation with natural lactobucillus) or fast brewing yeast mash.
