PROBLEM TO BE SOLVED: To provide a new system for preserving freshness of caught fish, capable of preserving the freshness by keeping the caught fish, such as tuna fish, in a fresh state. SOLUTION: This system for preserving the freshness of the caught fish comprises cooling freshness-preserving water 3 which is stored in a fishing tank 2 of a hull 1 so as to keep the water 3 at a temperature of about -1.0°C, and immersing the caught fish 5, such as the tune fish, in the water 3. The freshness-preserving water 3 comprises an activated aqueous solution which mainly consists of seawater and contains a ferric ferrous salt expressed by formula: Fe<SP>+2</SP><SB>m</SB>Fe<SP>+3</SP><SB>n</SB>Cl<SB>2m+3n</SB>(m and n are each a positive integer). Characteristics which the ferric ferrous salt has, such as a nonionization phenomenon and an antioxidant effect, make the freshness stably preserved for a long period by keeping the fish in the fresh state.
