PURPOSE: To obtain an oil in water-type emulsified oil and fat composition excellent in emulsion stabilities, and plasticized material thereof having excellent extensibilities and resistances to agitation, rolling and extruding, and useful for low oil content and low calorie foods, etc., by homogeneously emulsifying specific oil and water phases in a specific ratio. CONSTITUTION: This oil in water-type emulsified oil and fat composition comprises homogeneously emulsifying (A) 15-50 pts.wt. oil phase containing 0.3-1.5wt.% polyglycerine condensed ricinoleic acid ester as an emulsifier, 0.05-0.2wt.% lecithin and 0.1-5.0wt.% acetic acid glycerine fatty acid ester, with (B) 85-50 pts.wt. water phase. |
