The invention relates to a stable, pourable food product with keeping qualities, having a gas bubble content so that an overrun of at least 25% is obtained, which food product is sour. Besides, the invention relates to a process for preparing a stable sour product with keeping qualities, into which so much gas can be brought that an overrun of at least 25% can be obtained, a thickener system active in acid conditions being added to a liquid food product, which system comprises modified starch, and which mixture is subjected to a step in which the structure of the modified starch globules is substantially brought into a microscopically invisible form. |
