<P>PROBLEM TO BE SOLVED: To provide a method of producing an antioxidant substance from fermented milk kefir, a method for identification, and provide a remedy for diabetes including kefir, a tissue-repairing agent that has DNA-repairing action, and healthy food. <P>SOLUTION: The method of producing an antioxidant from kefir comprises the first step where kefir is centrifuged to precipitate the milk fat and obtain the supernatant, the second step where the supernatant is dialyzed with a dialysis membrane of a fraction molecular weight of 1,000 to collect the external fluid with a molecular weight of ≤1000, the third step where the external fluid is concentrated, the concentrate is neutralized with alkali to remove the precipitate and obtain separated fluid, the fourth step where the separated fluid is dialyzed with a dialysis membrane of a fraction molecule of 11 to obtain the inner fluid with a molecule of ≥100, and the fifth step where the antioxidant obtained from kefir is identified by the on-line HPLC process and the fraction is collected. In addition, a remedy for diabetes and a tissue-repairing agent having DNA-repairing action are provided. <P>COPYRIGHT: (C)2004,JPO |
