PROBLEM TO BE SOLVED: To align harvested bean sprouts with their heads and roots arranged, to select sprouts having a certain length or more, and to align the selected sprouts in a line. SOLUTION: A bean sprout aligning device is constituted of a supplying part for supplying bean sprouts; a posture controlling part comprising a vibration plate and a vibrator which gives a vibration of horizontal component force to the vibration plate, for arranging the direction of the sprouts' heads and roots on the vibration plate; a selecting part comprising a roller conveyer, wherein many rollers, whose cross sections are almost circular, are arranged in parallel at predetermined interval so as to have a certain space between rollers adjacent to each other, orthogonally to the carrying direction of the sprouts on a flat surface, and each of the roller are rotated, for carrying the sprouts whose directions are arranged and picking up sprouts having certain length or more; and an aligning part comprising a belt conveyer which moves to the orthogonal direction to the movement of the selecting part, for aligning bean sprouts received from the selecting part.
