PROBLEM TO BE SOLVED: To provide a purification method of an anthocyanin pigment solution having excellent dispersibility and solubility, and also to provide an anthocyanin pigment solution having the above properties. SOLUTION: The purification method of an anthocyanin pigment solution comprises adjusting an aqueous pigment solution extracted from a plant containing anthocyanin or its aqueous roughly purified solution to an ethanol concentration of 0-15 wt.%, to a pH of 1.9-2.5 and to color valency (E10%) of 30-10 and removing the undissolved product after leaving the above solution at 0-8°C to precipitate the undissolved product. The anthocyanin pigment solution does not generates a precipitate after 24 hours of storage when adjusted to the above conditions. COPYRIGHT: (C)2004,JPO
