<P>PROBLEM TO BE SOLVED: To provide a method for producing noodles of chilled distribution type, which are eatable without boiling and cooking, are different from conventional boiled noodles for chilled distribution, have firmness and do not become soft and have excellent flavor and palatability. <P>SOLUTION: The method for producing the noodles of the chilled distribution the comprises (a) a process for adding one or more of alginic acid, an alginate and an alginic acid ester to raw material flour, (b) a process for optionally adding an alkali agent to the raw material flour so that long strips after heat treatment in post-processing (e) have pH 6.0-8.0, (c) a process for kneading the raw material with water and making noodles to give raw long strips, (d) a process for sealing and packaging the long strips in a package without gelatinization and (e) the process for heat-treating the raw long strips together with the sealed and packaged package at 85°C-100°C for 10 minutes - 60 minutes. <P>COPYRIGHT: (C)2004,JPO |
