FIELD: food industry. SUBSTANCE: for the purpose to obtain food product according to the first variant, one should introduce, at least, one carrier and/or carrier's precursor into food foundation. The mixture obtained undergoes physical or physicochemical and/or chemical and/or biochemical treatment to obtain, at least, one immobilized biocatalyzer to achieve the mass of immobilized biocatalyzer in the product up to the quantity meeting the following ratio: lg(MIBC/Mprod)∈(-8;0], where MIBC - IBC mass in product's composition, Mprod - total mass of the product. For the purpose to obtain food product according to the second variant one should introduce, at least, one immobilized biocatalyzer into food foundation containing, at least, one carrier and, at least, one biologically active component. After introducing immobilized biocatalyzer, the mixture obtained undergoes physical and/or physicochemical and/or chemical and/or biochemical treatment by obtaining ready-to- use product containing immobilized biocatalyzer to achieve IBC mass in the product up to the quantity to meet the following ratio: lg(MIBC/Mprod)∈(-8;0], where MIBC - IBC mass in product's composition, Mprod - total mass of the product. The present innovation enables to obtain the product of dietary, prophylactic properties and, also, improved palatability and structural characteristics; product of heat is of higher biological value.
