FIELD: food industry. SUBSTANCE: the present innovation deals with preparing bananas, their purification, pulp reducing to obtain juice, acid hydrolysis of skin, separation of hydrolyzate and its blending with juice. Before purification bananas should be treated with preparation obtained due to successive extraction of Mortierella dichotoma micromycete biomass with nonpolar extragent in supercritical state with water, alkali, water, acid, water, alkali and water followed by combining solid residue with the first extract at the quantity of 0,5-1.104 mg/t to be kept for 2-5 h. The suggested innovation enables to increase product's quality. EFFECT: higher efficiency. |
