METHOD OF PREPARATION FOR AMYLASE INHIBITOR

PROBLEM TO BE SOLVED: To provide a method which effectively prepares an amylase inhibitor abundantly containing 0.19AI having high amylase inhibitory activity, in a simple step and a short time as compared to conventional process. SOLUTION: The method of preparation for the amylase inhibitor comprises: a step (A) obtaining a stock solution containing the amylase inhibitor; a step (B) collecting salting out insoluble substance by adding salt to the stock solution obtained in the step (A) to salt out the amylase inhibitor as the insoluble substance; and a step (C) collecting the amylase inhibitor from the insoluble substance collected in the step (B). The amylase inhibitor of the invention effectively suppresses secretion of insulin effective for prevention and/or remedy of hyperglycemia, diabetes, lipemia, arterial sclerosis or obesity because the amylase inhibitor has high amylase inhibitory activity on the other hand has no inhibitory activity to trypsin and has high amylase inhibitory activity especially to amylase contained in pancreatic juice.
