PURPOSE:To obtain rice of middle water content, rapidly reconstituting with hot water, having excellent appearance, taste and texture after restoration and improved shelf stability by gelatinizing rice so as to make gelatinized rice have >= half water content after gelatinization and humidifying the gelatinized rice to make a water activity value in a specific range. CONSTITUTION:Rice gelatinized to >=50% water content after gelatinization is humidified to make water activity value 0.5-0.95 to give the aimed rice of middle water content wholly or partially gelatinized. Degree of gelatinization is preferably 90-100%. |
