PURPOSE: Provided is a method for manufacturing ginseng jam to reinforce the functionality of the ginseng jam and to meet consumer's needs and taste preference. CONSTITUTION: A method for manufacturing ginseng jam is characteristically comprises the steps of: washing and pulverizing ginseng; mixing saccharides and hydrated pectin and followed by addition of the mixture thereof to the ginseng and heating; and adding a citric acid solution to the ginseng, followed by stirring and concentration. |
