<P>PROBLEM TO BE SOLVED: To provide a method for producing rice that hardly becomes pasty (pregelatinized rice), becomes soft when being soaked in water or hot water as water rapidly infiltrates thereinto and has rice grains with surfaces hardly dissolving in water when being cooked. <P>SOLUTION: This method for producing the pregelatinized rice comprises applying steam at 90-150°C or heated air at high humidity for 2-15 min to refined rice (such as white rice and rice with germ obtained by polishing brown rice and excluding the whole or the most part of the aleuron layer of the surface). The method further comprises soaking the rice in water for 10-50 min followed by taking the rice out, heating the rice with steam at 90-105°C or heated air at high humidity for 10-30 min so as to change starch into pregelatinized starch, heating the rice with heated air at high humidity at 110-200°C for 5-10 min to make the tissue of the rice minute and decrease the water content to about 15-20%, and applying room air or air at 40-60°C to the rice followed by cooling the rice. <P>COPYRIGHT: (C)2004,JPO |
