PROBLEM TO BE SOLVED: To produce amino acids fromα-ketoacids by using an enzyme originating from a natural microorganism independently of the gene recombination technique. SOLUTION: A transaminase originating from bacteria, e.g. Flavobacterium, Arthrobacter, Brevibacterium, Brevundimonas or Micrococcus or from yeasts, e.g. Pichia, Hansenula, Candida, Cryptcoccus or Schizosaccharomyces is allowed to act on anα-ketoacid in the presence of an amino acid as an amino group donor and whereby a variety of amino acids corresponding to theα-ketoacids can be produced.
