<P>PROBLEM TO BE SOLVED: To obtain a fermented beverage which is obtained from barley such as two-rowed barley, six-rowed barley, etc., as a starting raw material and contains citric acid and GABA contributing to health promotion. <P>SOLUTION: The method for producing a citric acid-containing fermented beverage comprises (a) a process for germinating raw barley to give malt, drying the malt, grinding the dried malt, immersing the malt in water and cooking the malt, (b) a process for inoculating the cooked barley with Aspergillus usami, producing a koji from the inoculated barley at a temperature of about 10-30°C lower than an ordinary temperature to form citric acid from a saccharide, (c) a process for adding warm water at about 55°C to the produced koji and decomposing the left starch into saccharides such as glucose and maltose with amylase produced by Aspergillus usami and (d) a process for carrying out aftertreatment such as filtration, sterilization, etc. <P>COPYRIGHT: (C)2004,JPO |
