<p><P>PROBLEM TO BE SOLVED: To provide a new method for producing an alcoholic beverage, with which an alcohol beverage having a flavor of refined rice wine prepared from rice as a raw material, a flavor of fruit wine prepared from fruit juice or a fruit of fruits, etc., as a raw material and a harmonized flavor of these flavors is obtained, namely, the alcoholic beverage using rice, rice koji and fruit juice or a fruit as raw materials is obtained. <P>SOLUTION: The alcoholic beverage is produced by a saccharification process P2 for using rice 1, a rice koji 10, water 5 and fruit juice or a fruit 4 as raw materials and saccharifying the rice 1 with the rice koji 10 to give a rice saccharified solution 20, a fermentation process P3 for simultaneously fermenting both the rice saccharified solution 20 and the fruit juice or the fruit 4 with yeast 3 and a solid-liquid separation process P4 for subjecting the fermented product 30 in a solid-liquid mixed state obtained by the fermentation process P3 to solid-liquid separation to give a raw alcoholic beverage 40. <P>COPYRIGHT: (C)2004,JPO</p> |
