<P>PROBLEM TO BE SOLVED: To provide a yeast variant containing large amounts of an oxidized glutathione also stable in an aqueous solution or both reduced and oxidized glutathiones, to provide dried yeast cells and yeast extract utilizing the yeast variant, and to provide methods for producing them. <P>SOLUTION: The yeast variant belongs to the genus Candida, is viable in the presence of a polyene-based antibiotic, and contains a large amount, preferably ≥1 wt.%, of the oxidized glutathione. <P>COPYRIGHT: (C)2004,JPO |
